Chai Concentrate (no sugar)

Branch Creek’s Winter warming Honey Chai concentrate.

Ingredients:

  • 20 cardamon pods

  • 2 tsp fennel seeds 

  • 2 tsp coriander seeds

  • 2 tsp black peppercorns (whole)

  • 16 whole cloves (approx. 3/4 tsp) 

  • 8cm fresh ginger (chopped) 

  • 3 cinnamon sticks

  • 6 cups water (1.5 litres) 

  • 2 Tbsp Branch Creek Honey*

  • 10 black tea bags (10 Tbsp loose tea)*

Method:

  1. Using a mortar and pestle, gently pound cardamon pods, fennel seeds, coriander seeds and peppercorns. Add these to a large pot. 

  2. Add all other spices and water to the pot and bring to a simmer for approx. 15 minutes. 

  3. Add in honey and stir gently until it dissolves. Don’t let the concentrate boil. 

  4. Remove from heat and add tea bags for 2-4 minutes. You may adjust this depending on your preferred taste. After 4 minutes remove and set the concentrate aside to cool. 

  5. Strain the concentrate to remove all the spices. 

How to serve:

  • For a Chai Latte, add half chai concentrate and half warmed milk, dust with cinnamon 

  • For Chai Tea add warm water to desired strength + and extra honey if you have a sweet tooth

*adjust quantities for desired/ preferred taste. 

Concentrate can last for up to 3 weeks if refrigerated.
