Honey Muesli Bar

A favourite on our farm for smoko time! Filled with all the good stuff to keep you going all day and made using our honey!

[ Prep time: 10 mins.  Cooking time: 15-20 minutes at 170°C. ]

Ingredients:

  • 4 Weetbix

  • 1/2 cup flour (either white or wholemeal)

  • 1 tsp baking powder

  • 1/2 cup rolled oats

  • 1/2 cup desiccated coconut

  • 2 Tbsp pumpkin seeds

  • 2 Tbsp sunflower seeds

  • 1/2 cup dried fruit (apricots work great!)

  • 1 egg

  • 100g butter

  • 1/2 cup sugar (you can reduce this and add honey instead)

  • 1 tbsp honey (you can use either our Creamed or Raw)

Method:

  1. Preheat oven to 170°C.

  2. In a large bowl crush the weetbix. Add flour, baking powder, oats, coconut, seeds and fruit. Mix with a wooden spoon.

  3. In a seperate bowl, mix the egg well with a fork.

  4. In a medium saucepan add butter, sugar and honey.  Turn to a low heat and stir until melted, watch closely to make sure the honey doesn’t burn.

  5. Pour wet mixes into dry mix and combine well.

  6. Spoon mixture into lined baking tray (approx. 20cm x 20cm) and press down well.

  7. Bake for 15-20 minutes or until golden.

  8. Leave in tin to cool, then remove and slice.
